I finally bought an oven tray last week and I decided to try it out. The thing was, I didn’t really know any recipes that required an oven tray, which begs the question, why did I buy it? Well, it can’t be that hard to make something up, right?

Right.

So I made up a thing I call Oven-Baked Chicken, since it’s chicken, and you cook it in the oven…

It was really easy! I cooked a whole pack of mini-fillets with the intention of eating half for dinner and saving half for lunch the next day, but it was so good that I ate the entire thing at dinner. I’ve made it about three more times since and I think I’ve got it down. If you have this with rice or salad for dinner, it would probably be enough for 2 people. It’s easy and quick, as anything I bother making usually is.

Here’s what you need:

– Oven tray

– Chicken Fillets

– Margarine or Butter

– Cream Cheese, or as it’s called in the UK, Soft Cheese (I used Garlic & Herb but you can use whatever you want)

– Salt

– Grated Cheese

– Chive Seasoning

– Onion, chopped

– Bell Pepper, also chopped

– Mushrooms, sliced

– Spinach leaves, optional

Here’s what you do:

Preheat the oven to 200º and butter the oven tray. Put the chicken fillets on the tray. I like to have them lined up in a row, side by side. It’s easier if they’re closer together.

Put cream cheese on the chicken. Careful not to cross-contaminate. You don’t have to spread it out or anything, you can just put a dollop on. I prefer to put smaller dollops along the chicken so that it covers more, but that’s just me.

IMG_3667Sprinkle some salt evenly over the chicken. Then sprinkle the chopped onion. Then add the chopped peppers and mushroom slices. If you want, add the spinach, too. I put spinach on half just to try it. Then sprinkle the chives, and then add cheese over everything. It’s basically a chicken reverse-pizza at this point.

You can add or subtract whatever vegetables you want. I’m sure tomato slices or even pineapple would taste really good with this. I suggest you stick to ingredients you’d find on a pizza. I don’t know how well okra would go…

After that, all you’ve got to do is stick it in the oven for fifteen minutes. When it comes out, you will have the most beautiful and delicious meal I’ve ever suggested to you.
